Sage is highly aromatic with a pungent and slightly bitter taste. A classic poultry seasoning, it is also commonly used in sausage and pork dishes, salad dressings, chowder, fish dishes, and cheeses.
Rubbed Sage has a fluffy consistency because of the way it is broken or "rubbed". It is best used when Sage shouldn't be apparent in the final dish because it disintegrates when cooked.
